Cheese whiz Werlin (Great Grilled Cheese) apparently has this niche covered; all of the books she's written involve cheese. She discusses strategy (to grate or not?), the ratio of cheese to bread, and types of bread. Butter the bread or the pan? Salted butter? And you thought grilled cheese was simple! The dishes range from Italian Melt to Chips and Guacamole Grilled Cheese to Brie, Mozzarella, and Pears with Blue Cheese Butter. The chapter "Grilled Cheese on the Go" highlights restaurants around the United States. Destined to melt the cheese lover's heart.
